2 Ingredient Chocolate Covered Ice Cream Balls Recipe

Makes 8-10 balls
Ingredients:
-Ice cream of your choice (I used Ben & Jerry’s “Netflix & Chill’d” ice cream)
-100 grams chocolate of your choice (I used caramelized white chocolate with almond pieces)
-1 tsp vegetable oil
Instructions:
1) Scoop ping-pong sized balls of ice cream and transfer them into silicone cupcake liners or a muffin tin. Place in the freezer for two hours.
2) Break the chocolate into small pieces. Place a heat-resistant bowl over a pot of boiling water. Place the chocolate in the bowl and stir until completely melted. (alternatively, place the chocolate in a microwave-safe bowl and microwave in 30-second intervals, stirring after each, until completely melted). Add the oil and stir well. Let the melted chocolate reach room temperature.
3) Take the ice cream balls out of the freezer. Using a spoon, dip them into the melted chocolate until completely coated and transfer them back into silicone cupcake liners or a muffin tin. Place in the freezer for 30 minutes more. Store in the freezer until serving.
