Apples in Honey and Spices Cake Recipe

Fits an 8-inch/20 cm cake pan
Ingredients:
For the apples in honey and spices filling:
-3 apples, peeled and cut into medium-sized cubes
-¼ cup honey
-½ tsp cinnamon
-¼ tsp ground ginger
-A pinch of nutmeg
-A pinch of allspice
-A pinch of cloves
For the batter:
-1 cup all-purpose flour
-3 eggs
-1 cup sugar
-½ tsp cinnamon
-¼ tsp ground ginger
-A pinch of nutmeg
-A pinch of allspice
-A pinch of cloves
-A pinch of salt
-¼ cup powdered sugar, a handful halved pecans or sliced almonds, for decoration (optional)
Instructions:
For the apples in honey and spices filling:
1) In a bowl stir apples, honey and spices until combined.
2) Transfer the filling into a greased 10-inch/20 cm cake pan.
For the batter:
1) Using a stand/hand mixer, whip eggs and salt for 5-6 minutes, gradually adding the sugar, until the mixture is light and fluffy. Add flour and spices and continue whipping until combined.
2) Pour the mixture on top of the filling in the pan and stir lightly to evenly distribute the apples. If you wish to decorate the top with halved pecans or sliced almonds, do so before putting the cake in the oven.
3) Bake in an oven preheated to 356° F/180° C for 30-35 minutes, or until golden. If the cake is golden at the top but the inside is still under-baked, you can cover it with aluminum foil and let it bake at 356° F/180° C heat for another 10-15 minutes. Let cool completely before removing from the pan. You can decorate the top with powdered sugar once the cake has completely cooled. Store the cake in the refrigerator in a sealed container for up to a week.
