Doughnuts Filled with Spiced Toffee Recipe

Makes 10-12 doughnuts
Ingredients:
For the doughnuts:
-1 cup milk
-¼ cup sugar
-1 egg
-7 grams active dry yeast
-400 grams all-purpose flour
-5 grams salt
-30 grams butter (room temperature)
-1 cup vegetable oil, for frying
-10 grams butter, for coating (optional)
-2 tbsp sugar, for coating (optional)
-½ tsp cinnamon, for coating (optional)
-¼ tsp ground ginger, for coating (optional)
For the spiced toffee filling:
-120 grams honey
-120 grams butter
-120 grams brown sugar
-½ tsp cinnamon
-¼ tsp cinnamon
-A pinch of nutmeg
-A pinch of allspice
-A pinch of cloves
-A pinch of kosher salt
-1/2 cup boiling water
Instructions:
For the doughnuts:
1) In a large bowl, mix milk, sugar, egg and yeast until combined. Add flour and salt and mix well until a dough begins to form. Cover and let rest for 10 minutes.
2) Add butter and knead well until incorporated into the dough. Transfer onto a lightly floured surface and knead until dough is elastic and smooth.
3) Place the dough in a lightly greased bowl. Cover and let rest for about an hour, or until doubled in size.
4) Transfer the dough onto a lightly floured surface and gently flatten it using your fingers. Knead the dough for a few minutes and divide it to 10-12 medium sized balls (each ball should weight about 60 grams). Cover and let rest for 15 more minutes.
5) In a large pot, heat oil and fry doughnuts over medium-low heat for about 3 minutes on each side, until golden. Let cool completely.
6) Using a wooden or metal skewer, make a deep hole on the top or the side part of each doughnut. Set aside until the filling is ready.
For the spiced toffee filling:
1) Place all the ingredients in a small pan and place over a medium-low heat. Let simmer for 5-6 minutes while constantly stirring until all the sugar is melted. Add boiling water and keep stirring for 2-3 minutes until the consistency is thick and smooth. Remove from heat and let completely cool.
2) Once the filling is ready, transfer it into a piping bag and use it to fill the hole you made in the doughnuts.
3) To coat the doughnuts, you can mix sugar, cinnamon and ground ginger in a bowl, put the butter in a microwave-safe bowl and melt in the microwave for about 1 minute, then brush the doughnuts with the melted butter and roll them in the sugar and spices mixture until evenly coated. Store the doughnuts in the refrigerator in a sealed container for up to a week.
