Nut Butter Cookies Gluten Free Recipe

Makes about 15 cookies
Ingredients:
-1 egg, beaten
-250 grams nut butter (almond, peanut, hazelnut, etc.), cold or in room temperature
-½ cup brown sugar
-1 tsp baking soda
-½ tsp vanilla extract
-1 cup extra add-ins: chocolate chips, cranberries, roughly chopped nuts, etc. (optional)
Instructions:
1) In a bowl, thoroughly mix all the ingredients (except for the add-ins) until combined. If you want, add the add-ins and mix until incorporated into the batter.
2) Roll the dough into ping-pong sized balls and place on a paper lined baking tray.
3) Bake in an oven preheated to 338° F/170° C for 8-10 minutes, or until golden. Let cool completely.
