Cocoa and Pecan Amaretti Cookies Recipe

Makes about 15 cookies
Ingredients:
For the cookies:
-1 egg white
-A pinch of salt
-140 grams almond flour
-140 grams sugar
-2 tbsp cocoa powder
-⅛ tsp vanilla extract
-1 tbsp almond liquor/almond extract
-50 grams pecans, roughly chopped
For the coating:
-1 tbsp sugar
-1 tbsp powdered sugar
Instructions:
1) Using a stand/hand mixer, whip egg whites and salt for 5-6 minutes, until stiff peaks form.
2) Add almond flour, sugar, cocoa powder, almond liquor or almond extract and stir until thoroughly combined.
3) Add chopped pecans and stir until incorporated.
4) Roll the dough into ping-pong sized balls. Coat them in sugar, then in powdered sugar and place on a paper lined baking tray. Slightly flatten each ball using your fingers.
5) Bake in an oven preheated to 338° F/170° C for 12-15 minutes, or until cookies are cracked and set. Let cool completely.
