Apple and Berries Pie Recipe

Fits a 9-inch/24 cm pie dish

Ingredients:

For the pie crust:

-200 grams graham crackers

-100 grams butter

For the filling:

-300 grams fresh/frozen mixed berries

-1 Granny Smith apple, peeled and cut into medium-sized cubes

-1 tbsp lemon juice

-2 tbsp cornstarch

-⅔ cup sugar

Instructions:

For the pie crust:

1) Using a food processor, crush the graham crackers finely. If you don’t have a food processor, put them into a sealed Ziplock bag and roll over it with a rolling pin.

2) Put the butter in a microwave-safe bowl and melt in the microwave for about 1 minute.

3) In a bowl, mix graham cracker crumbs and melted butter until combined and resembling wet sand.

4) transfer the mixture into a 9 inch/24 cm pie dish. Using your hands or the flat bottom of a glass, firmly press the mixture into its bottom and sides. Bake in an oven preheated to 302° F/150° C for 10-12 minutes, or until golden.

For the filling:

1) In a bowl, mix berries, apple cubes, lemon juice, cornstarch and sugar until thoroughly combined.

2) Evenly spread the berry mixture on top of the baked crust.

3) Bake in an oven preheated to 302° F/150° C for 30-35 minutes, or until the center of the pie begin to bubble.

4) Store the pie in the refrigerator in a sealed container for up to a week.
